Salmon jerky is a flavorful, nutrient-dense snack that turns fresh salmon into a lasting pleasure. This dish uses a simple marinade of soy sauce, maple syrup or honey, and a hint of spices like garlic and smoky paprika to bring out a sweet-savory depth that complements the natural flavor of the salmon. After marinating, the salmon is carefully dried in a smoker or oven, resulting in chewy, delicious strips ideal for snacking. Salmon jerky, which is high in protein and Omega-3 fatty acids, is a pleasant, healthful option that is simple to prepare and ideal for travel, hiking, or simply eating at home.

Step 1
Cut the fish into four equal halves, width-wise. Rotate each part 90 degrees and slice lengthwise to about 1/4-inch thickness. Remove the pin bones with needle-nose pliers. Do not chop bony parts toward the middle of the fillet.
Step 2
Mix soy sauce, molasses, sugar, Worcestershire sauce, lemon juice, liquid smoke, black pepper, and spicy sauce in a big glass or ceramic bowl. Add the salmon and toss to coat evenly. Cover the bowl with plastic wrap and refrigerate for four hours.
Step 3
Remove the salmon from the marinade, shake off the excess, pat dry with paper towels, and discard the remaining marinade.
Step 4
Place salmon strips in a dehydrator and follow the manufacturer's directions until the desired doneness is reached, which should take about 6 hours. Every couple hours, check for doneness.

When producing salmon jerky, it is critical to properly watch the drying process to prevent the salmon from becoming excessively dry or harsh. Jerky should be chewy but not brittle. If you use an oven, keep the temperature low and consistent, around 170°F (77°C), to prevent frying the fish rather than drying it. To enhance flavor, increase the amount of spicy sauce, maple syrup, or spices in the marinade to your liking. Store the jerky in an airtight container to keep it fresh and enjoy it over time.
